Blueberry Lavender Cake

  • 4 oz (1 stick) butter
  • 1 c granulated, lavender sugar (reserve 1 T to use later)
  • 2 eggs
  • 1 c flour
  • 1 ½ tsp baking powder
  • 1 c fresh blueberries

Preheat oven to 350 degrees.  Butter and flour one spring form pan.  Mix lavender sugar with butter in a mixer for 2 minutes.

Add eggs, flour, and baking powder and mix for 2 more minutes.  Transfer batter to the prepared pan; smooth the top and sprinkle the blueberries evenly on top. Sprinkle the berries with the reserved 1 T lavender sugar.

Bake for 40 minutes, or until toothpick inserted in the center comes out clean. Cut in wedges when cool. Serve alone or with whipped cream or ice cream.
